Scientific Training for Triathletes by Dr. Phil Skiba
Phil is soon to be a Level I USAT coach and is already a USA Cylcing coach. I met him at the USAT Coaching clinic where he gave all the non science people a breifing on Lacate, VO2 Max, Aerobic capacity and science and it was awesome. I have read a lot in these areas but never has it been so clear before. The book takes the same approach of making what can be mind boggling concepts and making them easy to understand.

The Complete Guide to Triathlon Swimming by Kevin Koskella
Kevin found me through my site and introduced me to his book. Great reading that led to a PR in the first half iron after using it so I have to say it was worth the read. Very simple approach to improving swimming.

Chris Carmichael's Food for Fitness by Chris Carmichael, Jim Rutberg, Kathy Zawadzki
A must read for a person that needs to take a harder look at what they are eating, when to eat and how much. Done in laymans terms as well which is crucial when it comes to nutrition because there are way to many nutrition books that are impossible to follow.

The Ultimate Ride by Chris Carmichael, Jim Rutberg
More specific to cycling but a great read if you want to work on bike specific skills or try to work on building training programs. Great workouts and plans to help get you going.

Peak Performance: Mental Training Techniques of the World's Greatest Athletes by Charles A. Garfield, Hal Zina Bennett
Great book on training the mind. An area that all too many people forget. The mind is second to none when it comes to success out on the course. May seem like it is a little old school but it is still used by some of the top tri coaches in the world.

It's Not About the Bike by Lance Armstrong
The book on Armstrong's comeback from cancer. A truly inspiring book for any person much less an athlete
